People ask all the time,  “What kind of BBQ do you do?” They are really talking about the sauce.  The regionality of BBQ by and large is the sauce. We are really at the cross-roads here.  We’ve got SC mustards, the eastern vinegars, the western tomatoes and the southwestern tomatillos but you might think our smoke and seasoning are so good you won’t need sauce.
